O' Pancakes

Happy St. Patrick's Day!

I'm not sure I could trace a bit of legitimate Irish heritage in my ancestry (I'm mostly a mutt with a heavy dose of German) but I've always liked St. Patrick's Day. After all, my name is Erin, green is my favorite color, and who doesn't like rainbows and pots of gold?

So this morning, we had a festive breakfast: green pancakes!

The batter looked absolutely disgusting. If you've ever seen the 80's movie "Better Off Dead" and remember the scene where the mom serves the green goop that crawls off the plate...if I'd added raisins it would have looked just like that!

The kids were so excited. Everyone is wearing green today, and they even wanted green tint in their milk. Dan also added green food coloring to a glass of orange juice, also, and it worked, but did not look a bit appetizing to me. Orange juice should be orange.

Once breakfast was over, the magic disappeared somewhat as the kids learned that St. Patrick's Day is not a get out of school holiday, even if the weather is gorgeous. I've been told that leprechaun magic is like that-only an illusion.
